As a full-time Realtor (R), full-time mom and full-time woman (you know how it goes, the list goes on), every minute is precious. In an attempt to save time and money, I am trying this whole meal planning thing. The problem is the planning part; it has never been my thing. My husband crafted a chalkboard for my kitchen wall out of scrap wood trim and homemade chalkboard paint (sanded grout and latex paint; it works) where I write my menu for the next few days. On Monday, I planned on a kale pie and realized at 4PM that I didn’t have a pie crust made or purchased. Not in the mood to deal with sticky butter and a pastry blender, I sought something quicker and easier. With a few tweaks, here is my pie crust recipe. My husband is still raving about its delicious flakiness and I see many a savory pie in our future.
Easiest Pie Crust in the World
1 1/2 cups flour (I used unbleached all purpose)
1 teaspoon sugar
1 teaspoon salt
1/2 cup olive oil
1 tablespoon milk
1 tablespoon vodka

1. Preheat oven to 400 degrees.
2. Mix all ingredients with a fork in a 9″ pie dish until all the dry ingredients are wet. Press mixture into the bottom and sides of the dish. Poke holes with a fork.
3. Bake 15-ish minutes or until light brown. Proceed with desired recipe.
It really is that easy.
